Take a serrated knife and cut off all the rind from each Brie wheel. Set aside until they reach room temperature.

Put your room-temp Brie in a stand mixer bowl with the paddle attached. Mix on medium until it gets fluffy and smooth, about 10 minutes. Don't forget to scrape the sides now and then.

Scoop the fluffy Brie onto a plate. Add a drizzle of honey or jam on top and put out some crackers or toasts for dipping.
