Set up 10 paper liners in your muffin tin or place 10 silicone cups on a baking sheet.

Warm coconut oil in a small pot until liquid, then stir into peanut butter until smooth and well mixed. Throw in some salt if you'd like more flavor.

Drop a tablespoon of your peanut butter mix into each cup liner. Stick them in the freezer for 10 minutes to set up.

Pull cups from freezer and drop two teaspoons jam onto each peanut butter base. Press down lightly with the back of your spoon to spread it out.

Cover each jam center with another tablespoon of the peanut butter mix, making sure the jam is completely hidden.

Pop everything back in the freezer for at least 30 minutes until firm. Keep stored in a sealed container - freezer for harder cups, fridge for softer ones.

Want salt on top? Add it after 5 minutes in the freezer when cups are just starting to firm up. This keeps the salt from disappearing into the mixture.
