Take the hot skewers out of the oven. Sprinkle what's left of your green onions on top. Grab some sour cream on the side and dig in right away.

Toss the baking sheet back in the oven and give it 5 to 7 minutes, just long enough for the cheese to get all gooey.

Line another tray with parchment. Put your tater tot skewers on it and scatter half of those green onions, cheddar, and bacon bits all over.

After baking, let the tater tots chill off a bit so you don't burn your hands. Slide 4 to 6 tots onto each skewer.

Get your oven nice and hot (218°C or 425°F). Spread tater tots out on a baking sheet so they aren't crowded. Bake for 28 minutes. Flip them once about halfway.
