Pour the cool tea into eight to ten glasses, drop in some fruit, top with bubbly water, and throw in a couple of mint leaves. Hand out right away.

As your tea chills, slice up nectarines or your choice of fruit, and cut wedges of lemon or lime.

Toss the tea bags into the hot water, let them sit for about 2–3 minutes, then lift them out and toss. Add honey and give it a good stir. Pop a lid on and chill it.
