→ For Cooking

11 - Extra oil or cooking spray

# Step-by-Step Guide:

01 - Set your oven to 400°F (200°C). Spray your muffin pan or baking tray with some oil or cooking spray so nothing sticks.
02 - Grab a big bowl and toss together the mashed potatoes, cheddar, Parmesan, egg, flour, green onions, garlic powder, salt, and pepper until it's all blended well.
03 - Scoop out spoonfuls of the mix and roll them into tight little balls.
04 - Roll each ball around in the breadcrumbs or panko so each one gets a nice even layer.
05 - Put the coated balls into your prepared pan or lay them out on the greased tray, leaving some room between each.
06 - Spritz or brush some extra oil over the top of the balls to help them brown nicely.
07 - Pop them in the oven and bake for 20 to 25 minutes until they're crispy and golden all over.
08 - Give them a few minutes to cool before you take them out. Serve them warm, and dip if you want!

# Additional Notes:

01 - Using cold mashed potatoes helps get the best texture.
02 - Mix in some cooked, chopped bacon if you want a smoky flavor.
03 - You can freeze any extras and warm them up later in the oven to keep them crispy.
