Set your oven to 400°F (200°C). Spray your muffin pan or baking tray with some oil or cooking spray so nothing sticks.

Grab a big bowl and toss together the mashed potatoes, cheddar, Parmesan, egg, flour, green onions, garlic powder, salt, and pepper until it's all blended well.

Scoop out spoonfuls of the mix and roll them into tight little balls.

Roll each ball around in the breadcrumbs or panko so each one gets a nice even layer.

Put the coated balls into your prepared pan or lay them out on the greased tray, leaving some room between each.

Spritz or brush some extra oil over the top of the balls to help them brown nicely.

Pop them in the oven and bake for 20 to 25 minutes until they're crispy and golden all over.

Give them a few minutes to cool before you take them out. Serve them warm, and dip if you want!
