Set your oven to 425°F (220°C). Stick a baking tray in there while it warms up so it gets super hot.

Skin the sweet potatoes if you feel like it and slice them into 1/4 inch strips. Try to keep them all about the same size so they cook evenly.

Drop your cut sweet potato strips in cold water for half an hour. This gets rid of extra starch and helps them turn out crunchy.

Empty the water and dry the strips with paper towels. In a big bowl, mix them with olive oil, garlic powder, paprika, salt, and black pepper. If you want them extra crunchy, toss in cornstarch until they're all coated.

Take out the hot baking tray carefully. Lay out the strips so none are stacked on top of each other. Cook for 25-30 minutes, flip them halfway, until they look golden and crispy.

When they're crispy and golden, take them out. Wait a couple minutes before you eat them.
