# What You'll Need:

01 - 2 medium sweet potatoes, skinned if you want and sliced into 1/4 inch strips

# Step-by-Step Guide:

01 - Set your oven to 425°F (220°C). Stick a baking tray in there while it warms up so it gets super hot.
02 - Skin the sweet potatoes if you feel like it and slice them into 1/4 inch strips. Try to keep them all about the same size so they cook evenly.
03 - Drop your cut sweet potato strips in cold water for half an hour. This gets rid of extra starch and helps them turn out crunchy.
04 - Empty the water and dry the strips with paper towels. In a big bowl, mix them with olive oil, garlic powder, paprika, salt, and black pepper. If you want them extra crunchy, toss in cornstarch until they're all coated.
05 - Take out the hot baking tray carefully. Lay out the strips so none are stacked on top of each other. Cook for 25-30 minutes, flip them halfway, until they look golden and crispy.
