# What You'll Need:

01 - About 1 lb chicken breasts, boneless, skinless, and large
02 - 3 zucchinis, cut into thin 1/4-inch rounds
03 - 1 cup mozzarella, shredded
04 - 1/2 cup Parmesan, grated
05 - 1 tablespoon olive oil
06 - 2 garlic cloves, minced
07 - Salt and black pepper, fresh ground, to your liking
08 - 1 cup sour cream or yogurt (Greek style)
09 - 1 cup cheddar, shredded
10 - 1 teaspoon dried basil
11 - 1 teaspoon dried oregano

12 - 1 teaspoon garlic powder
13 - 1 tablespoon fresh parsley, chopped (optional for topping)

# Step-by-Step Guide:

01 - Turn the oven to 375°F (190°C). Lightly oil a 9 by 9 inch baking pan or something similar.
02 - Chop chicken into 1-inch strips or chunks. Sprinkle on salt, pepper, garlic powder, and onion powder.
03 - Cut zucchinis into thin rounds about 1/4 inch thick and keep them ready.
04 - Heat olive oil in a big pan over medium heat. Toss in the chicken bits and cook for 5 to 7 minutes till they're browned and fully done. Take them out and set aside.
05 - Add the minced garlic to the same pan and cook for about half a minute till you smell it.
06 - In a bowl, stir together sour cream or Greek yogurt, Parmesan, half the mozzarella, oregano, basil, plus a pinch of salt and pepper till creamy.
07 - Spread the zucchini slices evenly on the bottom of your baking dish.
08 - Put the cooked chicken over the zucchini. Pour the creamy sauce all over and spread it out smooth.
09 - Scatter the rest of the mozzarella and all the cheddar on top.
10 - Pop the dish in the oven and bake for 25 to 30 minutes until the cheese bubbles, gets golden, and zucchini gets soft.
