Turn the oven to 375°F (190°C). Lightly oil a 9 by 9 inch baking pan or something similar.

Chop chicken into 1-inch strips or chunks. Sprinkle on salt, pepper, garlic powder, and onion powder.

Cut zucchinis into thin rounds about 1/4 inch thick and keep them ready.

Heat olive oil in a big pan over medium heat. Toss in the chicken bits and cook for 5 to 7 minutes till they're browned and fully done. Take them out and set aside.

Add the minced garlic to the same pan and cook for about half a minute till you smell it.

In a bowl, stir together sour cream or Greek yogurt, Parmesan, half the mozzarella, oregano, basil, plus a pinch of salt and pepper till creamy.

Spread the zucchini slices evenly on the bottom of your baking dish.

Put the cooked chicken over the zucchini. Pour the creamy sauce all over and spread it out smooth.

Scatter the rest of the mozzarella and all the cheddar on top.

Pop the dish in the oven and bake for 25 to 30 minutes until the cheese bubbles, gets golden, and zucchini gets soft.

Pull it out of the oven, let it rest a few minutes. Sprinkle some fresh parsley if you want before serving.
