Crank the oven up to 375°F (190°C). Line a baking sheet with parchment and keep it nearby.

Toss the ground beef, all the seasonings, chopped pickles, and diced onion into a big bowl. Stir it all up so seasonings are spread out.

Cut your American cheese into 24 chunks, each about half an inch. Split the beef mix into 24 lumps. Squash each flat, place a cheese chunk in the middle, then wrap the beef around it so there’s no cheese peeking out.

Slide a big pan on medium-high. Sear the meatballs just until all sides look a little browned, turning gently. Don’t cook them all the way.

Use a bit of flour on your counter. Stretch out each thawed roll enough to cover a meatball. Pop a browned meatball in the middle, wrap it up, and squish the edges closed. Lay each one seam-down onto your prepared pan.

Brush each wrapped ball with beaten egg. Sprinkle sesame seeds all over the top.

Bake on the center rack for 18 to 20 minutes until tops look deep golden and smell amazing.
