For oven method, wrap each beet in foil and bake at 200°C until they're soft when poked, about 45-60 mins. Let them cool, then peel and slice. For stovetop, boil peeled beets for around 30 mins.

Grab a sharp knife or mandoline to get nice thin cucumber slices.

Combine olive oil with your choice of lemon juice or vinegar and the sweet stuff if you want it. Add salt and pepper to your liking.

Throw the sliced beets, cucumber pieces, and dill into a big bowl. Pour your dressing over and mix gently.

Sprinkle your feta on top and stir once more, or just leave it sitting pretty on top.
