Heat your oven to 350°F. Cover a nonstick baking tray with plenty of cooking spray.

Get a big pot of salty water bubbling. Toss in your cauliflower bits and let them cook until soft when poked, about 5-10 minutes. Drain them really well then dump into a food processor. Give it a few quick pulses until you get rice-sized pieces. Don't blend it too much.

Scoop 3 packed cups of your mashed cauliflower into a big bowl. Mix in the chopped onion, Parmesan, breadcrumbs, egg, 1 teaspoon salt and 1/4 teaspoon pepper. Stir it all up until it looks kind of like mashed potatoes.

Grab small handfuls of the mix, about 1-2 tablespoons each time. Roll them into little tot shapes with your hands. Put them on your greased tray, leaving an inch of space between each one. Keep going until you've used everything up.

Pop them in the oven for 20 minutes, then flip them over and cook another 10-15 minutes until they're nice and crispy. Take them out and serve with ketchup, pesto, hummus or whatever dip you like.

If you want to use an air fryer, warm it to 400°F. Spray the basket so nothing sticks, add a bunch of tots and cook for 6 minutes. Flip them over and cook 3-5 minutes more until they're golden and crunchy.
