Pop a patty on each bun and pile on lettuce, tomato, or extra cheese if you want. Dig in right away.

Give the patties a few minutes to chill on a plate once they’re done. That way, they stay juicy for building your burgers.

Set a grill pan or skillet on medium and drizzle with a bit of oil. Slide the patties in with some space around them. Grill each side for about 5–6 minutes, till they’re golden and the centers hit 75°C.

Take the mixture and split it into four. Shape your patties so they’re about 1.5 cm thick, and poke a small dip in the middle of each so they cook through the same.

Toss ground chicken, chopped spinach, cheddar, breadcrumbs, onion, garlic, mustard, Worcestershire, salt, and pepper in a big bowl. Mix it all up but don’t go overboard—just till combined.
