Get your smoker going at 107°C. Let it warm up evenly so it's ready.

Clean off any tough fat or shiny bits from the steaks. Slice them up into cubes, each about 4 cm.

Put the sweet and beef rubs together on one plate. On another plate, set the charcoal rub.

First, dunk the beef cubes' tops and bottoms in the charcoal rub. Roll the sides through the sweet and beef mix. Place them all on a flat rack.

Set the rack with the cubes right on the smoker. Close the smoker and let them catch smoke for about an hour. You're aiming for the inside to hit 49°C.

Move your steak cubes into a cast iron or foil pan. Pour barbecue sauce all over, sprinkle with brown sugar, and drop bits of butter everywhere.

Pop the pan back in the smoker. Shut the lid and let everything cook till the beef hits 54°C, butter's melted, and the sauce is kind of thick around the cubes.

Eat these steak bites while they're still warm, as a starter or even for your main meal.
