Chili Chicken Mains (Printable Version)

Chicken tossed in sweet chili with stir-fried vegetables makes for a filling, tasty bite.

# What You'll Need:

01 - Green onions, chopped for topping
02 - Sesame seeds to sprinkle on top
03 - A dash of salt and pepper for seasoning
04 - 1 cup fresh broccoli florets
05 - 1 bell pepper, cut in strips
06 - 1 teaspoon grated fresh ginger
07 - 1 tablespoon chopped garlic
08 - 2 tablespoons olive oil
09 - 1 tablespoon cornstarch
10 - 2 tablespoons soy sauce
11 - 1/2 cup sweet chili sauce
12 - 1 pound chicken breast, diced into small chunks

# Step-by-Step Guide:

01 - Right before eating, toss on some sliced green onions and a handful of sesame seeds.
02 - Toss the chicken and any sauce left in the bowl back in the skillet. Stir everything for 2 to 3 minutes, just long enough to warm it.
03 - Toss broccoli, bell pepper strips, ginger, and garlic into the same pan. Let it cook for 5 to 7 minutes, just until everything starts to soften up.
04 - Get olive oil hot over medium heat in a big skillet, then drop in your marinated chicken. Cook for 7 to 10 minutes, turning until brown all over and cooked through. Move chicken out of the skillet and put it aside.
05 - In a bowl, stir cornstarch, soy sauce, and that sweet chili sauce together. Throw in the chicken pieces, give it all a good mix to cover, and let it rest for about 15 minutes.

# Additional Notes:

01 - Make it sweeter or less sweet by changing how much sweet chili sauce you put in.
02 - You can pair this with noodles or steamed rice—whatever you like.
