Warm up your oven to 350°F. Coat a 9x13-inch baking dish with cooking spray and put it aside.

Warm the olive oil in a big skillet on high heat. Toss in mushrooms and cook them until soft, roughly 3 minutes. Add spinach and garlic. Keep cooking for 3 minutes until spinach wilts down. Sprinkle with salt and pepper as you like.

Spread your cooked veggies evenly across the bottom of your greased pan. Scatter green onions on top. Break up half the goat cheese and drop it over the vegetables.

Grab a large bowl and beat the eggs with milk. Add salt and pepper to match your taste.

Pour your egg mixture over everything in the pan. Crumble the leftover goat cheese on top.

Pop it in the oven for 30 to 40 minutes until eggs are firm and edges turn slightly golden. Take it out and let it cool down for 5 minutes.

Sprinkle with chives. Cut into squares and enjoy while warm.
