# Step-by-Step Guide:

01 - Warm up your oven to 350°F. Coat a 9x13-inch baking dish with cooking spray and put it aside.
02 - Warm the olive oil in a big skillet on high heat. Toss in mushrooms and cook them until soft, roughly 3 minutes. Add spinach and garlic. Keep cooking for 3 minutes until spinach wilts down. Sprinkle with salt and pepper as you like.
03 - Spread your cooked veggies evenly across the bottom of your greased pan. Scatter green onions on top. Break up half the goat cheese and drop it over the vegetables.
