Bring a large pot of salted water to a boil. Add pasta and cook until al dente, then drain. Reserve 120 millilitres of the pasta cooking water.

Combine diced chicken with Cajun seasoning, a pinch of salt, and black pepper until evenly coated.

Heat olive oil in a large skillet over medium-high heat. Add chicken and sear for 6 to 8 minutes until golden and cooked through. Remove chicken from skillet and set aside.

Reduce skillet heat to medium. Add butter and melt. Stir in minced garlic and cook for 30 seconds until fragrant.

Add honey to the skillet and let simmer for 1 minute, stirring to blend.

Pour in heavy cream and stir until smooth. Simmer for 2 to 3 minutes, allowing the sauce to thicken slightly.

Return cooked chicken to the skillet and toss to coat in the sauce. Add drained pasta and combine gently. If needed, add reserved pasta water to reach desired sauce consistency.

Divide among plates and serve immediately, garnished with parsley or green onions if desired.
