Jalapeño Popper Meatloaf (Printable Version)

# What You'll Need:

→ Meatloaf Base

01 - Black pepper, as much as you like
02 - Salt, as much as you like
03 - 1 teaspoon smoked paprika
04 - 1 tablespoon Worcestershire sauce
05 - 1 to 2 jalapeños, finely diced with seeds out if you want it mild
06 - 1 small onion, chopped up fine
07 - 1 egg, already beaten
08 - 1 cup breadcrumbs
09 - 2 pounds ground beef, lean

→ Filling and Topping

10 - 1/2 cup ranch dressing for pouring on top
11 - 4 strips of beef bacon, cooked crisp and broken into pieces
12 - 1 cup cheddar cheese, shredded
13 - 4 ounces cream cheese, let it soften first

# Step-by-Step Guide:

01 - Heat up your ranch dressing a little. After slicing the meatloaf, pour a big spoonful right on top while it’s still hot.
02 - Give the finished loaf a few minutes, around 5 or 10, to chill out so it stays juicy, then slice it up.
03 - Pop it in your oven set at 350°F (175°C). You want to bake it for about 45 to 50 minutes till it hits 160°F inside.
04 - Take your meat mix, press it into a loaf shape, chuck it in a greased pan or put it on a foil-lined tray.
05 - Toss in the soft cream cheese, add the shredded cheddar, then the bacon bits. Stir everything through so they're all over.
06 - Dump your beef into a big bowl. Add breadcrumbs, the egg, onion, jalapeños, Worcestershire, paprika, salt and pepper. Mix the whole lot with your hands or a spoon till it’s all just mixed.

01 - Spice it up with cayenne or leave out jalapeño seeds to keep it mild.
02 - Want it gluten-free? Grab gluten-free breadcrumbs or swap them out with almond flour.
