Mango Lime Shrimp Avocado Bowls (Printable Version)

Tangy shrimp bowls with avocado, mango, and lime-chili sauce, an easy and bright dinner.

# What You'll Need:

→ Bowls

01 - 1 lb big shrimp, shells removed and cleaned
02 - 1–2 soft avocados, cut into pieces
03 - 1 big juicy mango, chopped in cubes
04 - 2 cups ready rice or quinoa
05 - Chopped fresh cilantro (to top it off)
06 - Lime pieces (to squeeze on top)

→ Lime-Chili Sauce

07 - 1/4 cup Greek yogurt
08 - 1 tbsp mayo (if you want)
09 - 1 tsp chili powder
10 - Grated skin and juice from 1 lime
11 - 1 tsp honey or agave syrup
12 - Salt and pepper how you like it

→ Mango Salsa

13 - 1 mango cut in cubes
14 - 1/4 cup red onion chopped small
15 - 1 small jalapeño, cut tiny (skip if you don't like spicy)
16 - Juice squeezed from 1 lime
17 - 1–2 tbsp fresh cilantro, cut up
18 - Pinch of salt

# Step-by-Step Guide:

01 - Mix together the mango chunks, chopped red onion, tiny jalapeño bits, squeezed lime juice, cilantro, and a bit of salt in a bowl. Stir it up and put it in the fridge till you need it.
02 - Mix the Greek yogurt, mayo, chili powder, lime juice and skin, honey, salt, and pepper in a bowl. Taste it and add more of what you think it needs.
03 - Dry off the shrimp with paper towels and sprinkle with chili powder, garlic powder, salt, and pepper. Warm up a pan with a bit of olive oil on medium-high. Cook the shrimp about 2–3 minutes each side till they turn pink with some brown spots.
04 - Start with rice or quinoa at the bottom of each bowl. Add the cooked shrimp, avocado slices, and your homemade mango salsa on top.
05 - Pour the lime-chili sauce all over. Throw some cilantro on top and put lime pieces on the side for squeezing.

# Additional Notes:

01 - Try chicken, tofu, or salmon instead of shrimp if you want.
02 - Mix in some sriracha with the lime-chili sauce if you want more kick.
03 - Throw in some sliced radishes, black beans, or slaw for extra crunch.
