Cheesecake Berry Salad (Printable Version)

Loads of creamy filling, luscious berries, and banana slices make this the ultimate festive summer crowd-pleaser.

# What You'll Need:

→ Cheesecake Base

01 - 1 cup French vanilla coffee creamer, liquid
02 - 3.4 ounces dry cheesecake pudding mix (not prepared)
03 - 8 ounces cream cheese, let it get soft

→ Fruit Mixture

04 - 4 big bananas, sliced after peeling
05 - 1/4 cup lemon juice, squeezed fresh (about one big lemon does it)
06 - 12 ounces blueberries, fresh
07 - 1 pound strawberries, cut tiny after removing stems

# Step-by-Step Guide:

01 - Go ahead and dig in right away, or pop it in the fridge covered until you’re ready. Give it a gentle stir if it’s been sitting for a while.
02 - Scoop the cold cheesecake blend over your fruit. Carefully fold so it’s all mixed and nothing gets too mushy.
03 - Grab a roomy bowl and gently toss banana slices with lemon juice so they’re coated. Drain off leftover lemon juice. Now, throw in your berries and softly stir so everything hangs out together.
04 - Turn your mixer to low. Slowly splash in the creamer, just a spoonful at a time. Make sure the mix is smooth before adding more. Once it’s all in and smooth, put it in the fridge while your fruit gets ready.
05 - Pour the dry pudding mix into the bowl with the cream cheese and mix until it turns thick and smooth.
06 - Use your mixer to beat up the cream cheese in a bowl till all the lumps are gone. Scrape the bowl as you go to keep everything even.

# Additional Notes:

01 - Keep the cheesecake and fruit parts separate until serving so your dessert doesn't get runny.
02 - If your cream cheese blend gets super thick, splash in a bit more creamer to thin it out.
03 - Pour the creamer in gradually, or you’ll end up with a chunky mess.
04 - No creamer on hand? Mix together a cup of heavy cream, 1/4 cup powdered sugar, and two teaspoons vanilla for the same vibe.
