→ Soup Base

01 - 720 ml low-sodium chicken broth
02 - 1 can (400 g) diced tomatoes with all the juice
03 - 1 medium carrot, peeled and sliced into coins
04 - 1 bell pepper, chopped small
05 - 2 cloves garlic, finely minced
06 - 1 small onion, diced up
07 - 1 tablespoon olive oil

08 - 450 g medium shrimp, shells off and cleaned

10 - 1 teaspoon ground cumin

# Step-by-Step Guide:

01 - Scoop some soup into bowls. Toss a handful of cilantro on top, and grab extra lime wedges or chopped chilies if you're after more color or heat.
02 - Pour in lime juice right at the end. Taste it—need more salt, pepper, or a punch of cayenne? Go for it now.
03 - Drop the shrimp into your simmering pot and give everything a gentle mix. Watch for them to turn pink and non-see-through, around 3-4 minutes. Don’t let them get tough.
04 - Sprinkle in chili powder, smoked paprika, cumin, cayenne, plus salt and pepper. Stir and let the pot bubble gently for about 5-6 minutes—you want everything tasty.
05 - Toss in those diced tomatoes, liquid and all, and pour in the broth. Mix up everything and let it heat up to a nice simmer.
06 - Now, add in garlic, bell pepper, and the carrot slices. Give it 3-4 minutes to start getting soft and smelling good.
07 - Pour olive oil into a big pot over medium heat. Dump in your onion and keep it moving for 2-3 minutes till it’s looking soft and smells sweet.
08 - Chop up that onion, garlic, and bell pepper real fine, and slice the carrot. If your shrimp aren't already cleaned, get that done now—it’s way easier to cook with them prepped.
