Fast Fiery Shrimp (Printable Version)

Crunchy shrimp drizzled with sweet-hot glaze, finished with fresh lime and scallions.

# What You'll Need:

→ Main Ingredients

01 - 1 lb large or jumbo shrimp, shells and veins removed
02 - 2 cups plain or neutral oil, for deep frying
03 - 1 cup buttermilk
04 - ¾ cup potato starch or cornstarch
05 - ½ teaspoon salt
06 - ½ teaspoon garlic powder
07 - ¼ teaspoon black pepper
08 - 1 green onion, chopped finely for topping if you want

→ Sauce Ingredients

09 - ½ cup sweet chili sauce
10 - 2 tablespoons sriracha
11 - 1 tablespoon honey
12 - 1 tablespoon apple cider vinegar or rice vinegar
13 - ½ teaspoon fresh lime zest, grated
14 - 1 teaspoon fresh lime juice, squeezed

# Step-by-Step Guide:

01 - Put your cleaned shrimp in a medium bowl and cover with buttermilk. Let them soak for at least 10 minutes to make them tender.
02 - Mix sweet chili sauce, sriracha, honey, vinegar, lime zest, and lime juice in a small bowl. Stir it well and put it aside.
03 - Mix the potato starch, salt, garlic powder, and black pepper in a large bowl. Roll the shrimp in this mixture and tap off any extra.
04 - Warm the oil to 350°F (177°C) in a big pan over medium heat. Cook about 6 shrimp at once until they turn golden and crunchy, around 2 minutes total, turning once halfway. Don't crowd the pan.
05 - Take out the cooked shrimp and let them drain on a wire rack or some paper towels to get rid of extra oil.
06 - Put your shrimp in a big mixing bowl. Pour your sauce on top and gently mix to cover them. Add green onions on top if you'd like. Serve them while they're hot.

# Additional Notes:

01 - Buttermilk soaking makes the shrimp softer and adds more flavor.
02 - For the crunchiest results, eat these right away after cooking.
