Put your skillet on medium-low heat and melt the butter. Lay two bread slices next to each other. Stack each with one mozzarella slice, 9 pepperoni pieces, then another mozzarella slice. Top with the other bread pieces. Cook about 3 minutes per side until the cheese gets all melty.

Grab a small bowl that's microwave-safe and dump in the butter. Heat till it's melted. Mix in your parsley, Italian herbs, garlic powder and salt.

Grab your pastry brush and slather that garlic butter on both sides of your sandwich. Toss it back in the pan for 30 seconds on each side. Take it off the heat, throw some parmesan on top if you want, and serve with marinara sauce on the side.
