Crunchy quesadillas stuffed with mozzarella, pepperoni, and zippy sauce—awesome for fast meals friends will love.

# What You'll Need:

→ For the Vegetable Filling

01 - Salt and pepper as needed
02 - 1/2 teaspoon dried basil leaves
03 - 1/2 teaspoon of Italian spice mix
04 - 1/4 to 1/2 cup chopped bell peppers
05 - 1/4 cup minced onion
06 - 1 teaspoon butter or olive oil

→ For the Quesadillas

07 - 4-6 oz slices of pepperoni
08 - 1 cup shredded mozzarella
09 - 1/2 to 1 cup pizza or marinara sauce
10 - Eight 8-inch flour tortillas

# Step-by-Step Guide:

01 - Once you've cooked your quesadillas, give them a minute to rest before slicing them into pieces. If you want, dip them in extra marinara while they're still warm.
02 - Put the filled quesadilla in your skillet over medium heat, pressing lightly with a spatula, and cook each side for about 2-3 minutes. You want them golden and crispy, with gooey cheese inside.
03 - Grab half your tortillas and cover one side with marinara sauce. Add the veggies, then mozzarella and pepperoni. Finish with another tortilla on top, sandwich-style.
04 - Warm up the butter or oil in your frying pan at medium-high. Toss in onions and bell peppers, sprinkle in Italian seasoning, basil, plus salt and pepper. Sauté for a few minutes until they're tender, then take them out and set aside.

# Additional Notes:

01 - Skip the oil when cooking for super crispy quesadillas. Just use a dry pan.
02 - Pause a minute before slicing up your cooked quesadillas. That way, the cheesy filling won't leak everywhere.
