Once you've cooked your quesadillas, give them a minute to rest before slicing them into pieces. If you want, dip them in extra marinara while they're still warm.

Put the filled quesadilla in your skillet over medium heat, pressing lightly with a spatula, and cook each side for about 2-3 minutes. You want them golden and crispy, with gooey cheese inside.

Grab half your tortillas and cover one side with marinara sauce. Add the veggies, then mozzarella and pepperoni. Finish with another tortilla on top, sandwich-style.

Warm up the butter or oil in your frying pan at medium-high. Toss in onions and bell peppers, sprinkle in Italian seasoning, basil, plus salt and pepper. Sauté for a few minutes until they're tender, then take them out and set aside.
