# Step-by-Step Guide:

01 - Heat your oven to 350°F (175°C). Put parchment paper on two cookie sheets.
02 - Combine flour, baking soda, and salt in a bowl and stir together. Set it aside for now.
03 - In a bigger bowl, mix the room temperature butter, smooth peanut butter, white sugar, and brown sugar until they're nice and fluffy.
04 - Drop in the egg and vanilla, and beat until they're mixed in good. Slowly add your dry mix to the sweet mix, stirring just enough to combine them.
05 - Take spoonful chunks of dough and roll them into balls. Put them on your lined sheets about 2 inches from each other. Press each one down a bit with a fork to make crosshatch marks.
06 - Let them bake for 10-12 minutes until the edges turn golden. Cool them on the sheets for 5 minutes, then move them to a wire rack to finish cooling.
07 - Mix smooth peanut butter, confectioners' sugar, vanilla, and soft butter in a bowl until it's all smooth and blended.
08 - Once cookies are cool, spread filling on the flat part of one cookie, then stick another cookie on top.
09 - Put them in a sealed container at room temp.
