Peach Watermelon Mint (Printable Version)

Enjoy sweet summer vibes with this lively mix of peaches, watermelon, cool mint, and a kick of lime.

# What You'll Need:

→ Salad Components

01 - 1/2 cup chopped fresh mint leaves
02 - 1 English cucumber, sliced thin
03 - 3 peaches, ripe and cut into thin slices or wedges
04 - 3 cups cubed seedless watermelon, about 1.3 cm each

→ Dressing

05 - Pinch of sea salt
06 - 1 tablespoon honey (totally up to you)
07 - 2 tbsp freshly squeezed lime juice

→ Finishing Touch (optional)

08 - Some crumbled feta for on top

# Step-by-Step Guide:

01 - Spoon it into a big bowl or on a platter and scatter feta on top if you want. Enjoy cold or let it sit out a bit so it’s not too chilly.
02 - Pour the dressing over everything and toss gently. Don’t squash the fruit—just make sure it’s coated.
03 - Mix up the lime juice, honey if you’re adding it, and a bit of sea salt. Whisk until the honey is blended in.
04 - Toss the cucumber slices into the bowl, then sprinkle in all that fresh chopped mint.
05 - Chop up your watermelon into small cubes. Slice up those peaches. Dump both into a big mixing bowl.

# Additional Notes:

01 - If you make it ahead, leave the dressing off until you’re ready to eat so everything stays crisp.
