Mexican Cheesy Bake (Printable Version)

Crunchy chips, savory beef, beans, and loads of cheese get baked up and finished with bright fresh add-ons.

# What You'll Need:

→ Base layer

01 - 2 cups shredded Mexican cheese blend, split up
02 - 1 can (15 oz) refried beans
03 - 1 cup salsa, pick the heat you like
04 - 1 packet (about 1 oz) taco seasoning
05 - 1 pound ground beef or turkey
06 - 1 bag (9–10 oz) tortilla chips, gently smashed

07 - Fresh cilantro leaves
08 - Chopped green onions
09 - Sliced black olives
10 - Diced fresh tomatoes
11 - Guacamole
12 - Sour cream

# Step-by-Step Guide:

01 - Give it five minutes to chill after you pull it from the oven. Top with whatever you like—maybe grab some cilantro, olives, tomatoes, sour cream, guac, or green onions. Dig in while it’s still warm.
02 - Put your dish in the hot oven for about 20 to 25 minutes. Take it out once the cheese is bubbling and a bit golden around the sides.
03 - Scatter a cup of cheese on the seasoned meat. Drop the last of the chips on top, layer on the rest of the meat, and use the last cup of cheese so the whole thing is covered nicely.
04 - Spread the whole can of refried beans over your chips; don’t worry if it’s not perfect. Pour half the taco meat mix on that and try to make it even.
05 - Take half your smashed chips and blanket the base of your greased dish.
06 - Cook up your beef or turkey in a big skillet on medium. When it’s cooked through and no pink’s left, drain any fat, toss in the taco seasoning and salsa. Let it hang out for a couple minutes so everything gets tasty.
07 - Crank your oven to 375°F. Grease up your 9x13 dish with some butter or cooking spray.

# Additional Notes:

01 - Want a crunchier bite? Put the tortilla chips in just before you bake, not earlier. To kick up the heat, choose spicier salsa or sprinkle in chili flakes.
