Salmon Spinach Feta Patties (Printable Version)

01 - 2 cans (6 oz each) salmon, drained and shredded
02 - 1/2 cup frozen spinach, thawed and squeezed dry or 1 cup fresh spinach, chopped fine
03 - 2 cloves garlic, finely minced
04 - 1/3 cup crumbled feta cheese
05 - 1 tablespoon fresh dill, chopped (optional)
06 - 1/4 cup chopped red onion
07 - 2 large eggs, lightly beaten
08 - 1 teaspoon dried oregano
09 - 1 tablespoon fresh parsley, chopped
10 - 1 teaspoon grated lemon zest
11 - 1 tablespoon fresh lemon juice
12 - 1/2 cup breadcrumbs, regular or panko
13 - Salt and black pepper as you like
14 - Olive oil for frying

# Step-by-Step Guide:

01 - Warm some olive oil in a pan on medium heat. Fry each patty for 3 to 4 minutes on both sides till they're golden and a bit crispy.
02 - Take the mix and press it into 6 to 8 patties around 3 inches wide each.
03 - Throw the shredded salmon, wilted spinach, onion, garlic, feta, breadcrumbs, eggs, parsley, dill if you want, lemon juice, zest, oregano, salt, and pepper into a big bowl. Stir well till everything's mixed evenly.
04 - Open the salmon cans and drain the liquid. Pick out any skin or bones and shred the fish into a large bowl.
05 - Cook your spinach in a skillet over medium for about 2 minutes till it wilts. Let it cool a bit then get out as much water as you can by squeezing it tightly.
06 - Put cooked patties on some paper towels to soak up extra oil. Serve them warm with lemon wedges and some cool Tzatziki on the side.

# Additional Notes:

01 - Make sure to squeeze the spinach really dry to help your patties get crispy.
02 - If you like 'em crunchier, pick panko breadcrumbs instead of the usual kind.
03 - Want a lighter version? Bake patties in a 375°F (190°C) oven for about 20 minutes and flip halfway through.
04 - These are also fantastic on a bun as salmon sliders or tossed on a crisp salad.
