01 - 3 medium zucchini

05 - 1/3 cup grated Parmesan cheese
06 - 1 cup panko or Italian-style breadcrumbs
07 - 2 large eggs
08 - 1/2 cup all-purpose flour

09 - 2 tablespoons cooking oil spray

# Step-by-Step Guide:

01 - Mix up the breadcrumbs and Parmesan cheese in a bowl. Crack the eggs and beat them in a separate, smaller dish. Grab a large plate, then stir together the flour, salt, black pepper, and that Italian blend. Now you’ve got your stations set to go.
02 - Chop the zucchini into sticks around 3 inches each. Start by rolling a piece in your flour mix so it’s coated all over. Dip that in beaten egg, then transfer over to the breadcrumb-Parmesan bowl. Pat the coating onto every side so it sticks. Keep going until you’re done with all the pieces.
03 - Spray the bottom of your air fryer basket with oil. Put the coated zucchini fries down in a single layer—don’t pile them up. Give a quick spray of oil over the top to help them get crispy. Set your air fryer to 400°F (204°C), then let them go for about 9 minutes, until they’re golden and crunchy.
04 - Take the hot fries out with care and eat them right off the bat. These are awesome as a cheesy, herby snack or side—don’t let them cool off too much!

01 - You can swap in almond flour and crushed pork rinds instead of regular flour and breadcrumbs to keep it low-carb and gluten-free. If your pork rinds are already salty, cut back on the salt you add.
