Loaded Potato Comfort (Printable Version)

Velvety soup with spuds, green onions, bacon, and gooey cheese for a bold, filling meal.

# What You'll Need:

01 - Salt and pepper, just enough for your liking
02 - 2 tablespoons butter
03 - 2 green onions, thinly cut
04 - 6 bacon strips, fried and broken up
05 - 1 cup shredded cheddar cheese
06 - 1 cup heavy cream
07 - 2 garlic cloves, smashed up
08 - 1 small onion, chopped
09 - 4 cups chicken broth
10 - 6 medium potatoes, peeled and chopped

# Step-by-Step Guide:

01 - Spoon the hot soup into bowls and sprinkle with bacon bits, cheddar, and some green onions.
02 - Toss in those onions you cooked, pour in cream, then add salt and pepper. Give it a good stir and let it hang out on low heat for about 10 minutes. Make sure to check and stir a bit during that time.
03 - Take a potato masher or your stick blender and break up the potatoes in the broth. No need to go wild, leave some chunky bites.
04 - Toss butter in a skillet over medium. When it melts, throw in chopped onion and garlic. Stir until they get soft and you smell that goodness, about 5 minutes.
05 - Put the potatoes and chicken broth in your biggest pot. Bring it all to a boil. After that, turn the heat down and let it cook low for 15 to 20 minutes until the potatoes are fork-tender.
