Bang Bang Chicken (Printable Version)

# What You'll Need:

→ Chicken Marinade

01 - 680 g boneless chicken thighs or breasts, sliced into bites
02 - 3 tablespoons soy sauce
03 - 2 tablespoons sriracha
04 - 2 tablespoons honey
05 - 1 tablespoon rice vinegar
06 - 2 tablespoons olive oil
07 - 1 teaspoon garlic powder
08 - 0.5 teaspoon smoked paprika
09 - 0.25 teaspoon ground black pepper

→ Bang Bang Sauce

10 - 120 ml mayo
11 - 2 tablespoons sweet chili sauce
12 - 1 tablespoon sriracha
13 - 0.5 teaspoon lime juice
14 - 1 tablespoon honey if you want it sweeter

→ Garnish

15 - Cilantro or parsley, chopped fresh
16 - Extra lime wedges

# Step-by-Step Guide:

01 - Grab a big bowl. Mix in soy sauce, sriracha, honey, rice vinegar, olive oil, garlic powder, smoked paprika, and black pepper. Toss in the chicken. Let every piece get a good coat, then put a lid on and chill in the fridge for half an hour at least, or even a few hours if you can.
02 - Remember to dunk wooden skewers in water so they won't set on fire. Skewer your marinated chicken and leave a gap between each chunk for even cooking.
03 - Spoon mayo into a mixing bowl. Add sweet chili sauce, sriracha, lime juice, and (if you're into sweet stuff) some honey. Stir till smooth and stick it in the fridge until you need it.
04 - Crank your grill or grill pan to medium-high heat so it gets super hot. Give it a quick wipe with a little oil to keep things from sticking.
05 - Place chicken skewers over super hot grates. Flip every so often so they brown all over. You're looking for about 12 minutes. In the last few minutes, swipe a bit of your bang bang sauce on top.
06 - Slide skewers onto your favorite plate. Spoon over more bang bang sauce. Top with chopped herbs and squeeze fresh lime on the side for some zing.
