Grab a big bowl. Mix in soy sauce, sriracha, honey, rice vinegar, olive oil, garlic powder, smoked paprika, and black pepper. Toss in the chicken. Let every piece get a good coat, then put a lid on and chill in the fridge for half an hour at least, or even a few hours if you can.

Remember to dunk wooden skewers in water so they won't set on fire. Skewer your marinated chicken and leave a gap between each chunk for even cooking.

Spoon mayo into a mixing bowl. Add sweet chili sauce, sriracha, lime juice, and (if you're into sweet stuff) some honey. Stir till smooth and stick it in the fridge until you need it.

Crank your grill or grill pan to medium-high heat so it gets super hot. Give it a quick wipe with a little oil to keep things from sticking.

Place chicken skewers over super hot grates. Flip every so often so they brown all over. You're looking for about 12 minutes. In the last few minutes, swipe a bit of your bang bang sauce on top.

Slide skewers onto your favorite plate. Spoon over more bang bang sauce. Top with chopped herbs and squeeze fresh lime on the side for some zing.
