Keto Sausage Rollups (Printable Version)

Juicy sausage wrapped in gooey cheese and popped in the oven for an easy, low-carb lunch treat.

# What You'll Need:

→ Cheese Wrap

01 - 2 cups mozzarella, shredded

→ Filling

02 - 3 tablespoons grated parmesan
03 - 1/3 cup creamy ricotta
04 - 2 ounces cream cheese, extra soft
05 - 1/4 cup finely diced onion
06 - 1 pound mild ground Italian sausage

# Step-by-Step Guide:

01 - Fold each cheesy circle over the sausage mix and roll it up. Give them a few minutes to cool down so they get a bit crunchy before you dig in.
02 - Spoon some sausage filling straight down the center of each cooled mozzarella circle.
03 - Take the tray out and let the cheese disks sit for a minute so they set up and get nice and firm.
04 - Slide the mozzarella circles into the oven for around 6-8 minutes. When the outsides look gold and crispy, you’re good.
05 - Spread the shredded mozzarella into 8 even piles on a baking tray lined with parchment. Pat each into a circle.
06 - Toss the grated parmesan and ricotta in with the sausage mix. Let everything hang out to cool for a bit.
07 - Pull the skillet off the stove. Quickly stir in the super soft cream cheese so it melts and mixes in all the way.
08 - Brown the sausage and onions in a hot skillet. Once the meat’s cooked and the onions are tender, pour off any fat.
09 - Get your oven heating up to 400°F or 205°C.

# Additional Notes:

01 - Let the mozzarella cool a bit before you try to roll it or it'll just tear apart.
02 - Waiting a few minutes after rolling really helps them turn crispier and more delicious.
