Fold each cheesy circle over the sausage mix and roll it up. Give them a few minutes to cool down so they get a bit crunchy before you dig in.

Spoon some sausage filling straight down the center of each cooled mozzarella circle.

Take the tray out and let the cheese disks sit for a minute so they set up and get nice and firm.

Slide the mozzarella circles into the oven for around 6-8 minutes. When the outsides look gold and crispy, you’re good.

Spread the shredded mozzarella into 8 even piles on a baking tray lined with parchment. Pat each into a circle.

Toss the grated parmesan and ricotta in with the sausage mix. Let everything hang out to cool for a bit.

Pull the skillet off the stove. Quickly stir in the super soft cream cheese so it melts and mixes in all the way.

Brown the sausage and onions in a hot skillet. Once the meat’s cooked and the onions are tender, pour off any fat.

Get your oven heating up to 400°F or 205°C.
