Make your own flavorful Kashmiri Pink Chai with its stunning color change and deep, spicy taste.

# What You'll Need:

01 - 4 cups water
02 - 2 tablespoons mountain green tea or any green tea variety
03 - 1/2 teaspoon baking soda
04 - 1-2 star anise pods
05 - 2 smashed cardamom pods
06 - 1 cinnamon stick
07 - 1/4 teaspoon salt
08 - 2 cups whole milk
09 - Honey or sugar based on preference
10 - Chopped nuts (like almonds) for topping (if wanted)

# Step-by-Step Guide:

01 - Heat water until bubbling in a pot, drop in the green tea, and let it cook for about 5 minutes.
02 - Add your 1/2 teaspoon of baking soda and stir. You'll see the water turn deep red. Keep it bubbling for 2 more minutes.
03 - Toss in your star anise, smashed cardamom pods, and cinnamon stick and let bubble for another minute.
04 - Turn heat lower and let the tea cook for 20-30 minutes until it's about half as much as when you started, making the color deeper and taste stronger.
05 - Put in a quarter teaspoon of salt and stir it all together.
06 - Add your 2 cups of whole milk and turn up the heat until it bubbles. Keep stirring so the milk doesn't burn. The tea will start changing to a pink shade as it heats.
07 - When your drink shows a lovely pink color, take it off the heat. Pour through a strainer into cups to get rid of spices and tea bits. Add honey or sugar as you like. If you want, sprinkle some crushed nuts on top. Drink it hot!

# Additional Notes:

01 - Letting the tea bubble away for 20-30 minutes is key for getting that bright color and deep taste.
