Lay out foil on a 13x18 inch baking sheet and pop your oven on at 425°F. Leave the pan nearby.

Dice up your sweet potatoes after peeling. Dump them into your big bowl and sprinkle with salt.

In your small saucepan, mix olive oil with melted butter. Warm on medium until it blends. Add honey, lemon juice, and zest. Let it barely bubble for a minute.

Pour that honey-lemon blend over the sweet potatoes and give them a really good toss so they're all covered.

Spread the tossed potatoes all over the baking pan. Slide into the oven for about 25 minutes. Want deeper browning? Roast 3–5 minutes more if you need to.
