Honey Sweet Potatoes (Printable Version)

Sweet potatoes get tossed in honey, lemon, and butter, then baked until golden and soft. This sweet side vanishes fast.

# What You'll Need:

01 - Pinch of salt, more if you'd like
02 - 1/4 cup honey
03 - Juice and grated peel from 1 lemon
04 - 2 tablespoons unsalted butter, melted
05 - 1 tablespoon extra virgin olive oil
06 - 2 pounds sweet potatoes, peeled and chopped into small chunks

# Step-by-Step Guide:

01 - Lay out foil on a 13x18 inch baking sheet and pop your oven on at 425°F. Leave the pan nearby.
02 - Dice up your sweet potatoes after peeling. Dump them into your big bowl and sprinkle with salt.
03 - In your small saucepan, mix olive oil with melted butter. Warm on medium until it blends. Add honey, lemon juice, and zest. Let it barely bubble for a minute.
04 - Pour that honey-lemon blend over the sweet potatoes and give them a really good toss so they're all covered.
05 - Spread the tossed potatoes all over the baking pan. Slide into the oven for about 25 minutes. Want deeper browning? Roast 3–5 minutes more if you need to.
