Sweet Potatoes with Honey (Printable Version)

Tasty sweet potatoes drizzled with honey, mixed with apples and crunchy pecans for your festive table.

# What You'll Need:

01 - 3 pounds sweet potatoes (roughly 4 big ones)
02 - 1 cup chopped pecans
03 - 2 tablespoons plain butter
04 - 2 tablespoons coconut oil
05 - 2/3 cup honey
06 - 3/4 teaspoon cinnamon powder
07 - 1/2 teaspoon nutmeg powder
08 - 1/4 teaspoon cayenne pepper (change amount as you like)
09 - 1/2 teaspoon kosher salt
10 - 1/4 cup whiskey (try Maker's Mark, Irish Whiskey, or Bulleit Bourbon)
11 - 2 cups diced tart apples without skin or core, cut into 3/4-inch chunks (pick Granny Smith or Cortland, about 2 medium or 3 small ones)

# Step-by-Step Guide:

01 - Put your oven rack in the middle and heat to 375°F (190°C). Wash the potatoes but keep their skins on. Place them on aluminum foil and put directly on the oven rack. Cook for 45-60 minutes until they feel a bit soft when you squeeze them. Let them cool down, then peel and chop into 3/4-inch pieces.
02 - Warm up a medium pan over medium heat and toss in pecans until they smell good, about 3-4 minutes. Drop in the butter and coconut oil and wait for them to melt. Mix in honey, cinnamon, nutmeg, cayenne, and salt. Let everything bubble for 4-5 minutes. Then carefully pour in the whiskey and cook another 5 minutes until it thickens a bit, though it'll still look runny.
03 - Lightly grease a 9x9-inch dish or 2-quart baking container. Spread sweet potatoes and apples around, mixing them up evenly. Pour your whiskey-pecan mixture all over. Bake at 375°F (190°C) for 20-30 minutes until you can easily poke a fork through the apples and everything's hot.

# Additional Notes:

01 - Make the whiskey mix right before you bake for the tastiest results.
02 - You can cut your sweet potatoes and apples a day early if needed. Just cover them with plastic wrap and keep in the fridge.
