Stir the condensed milk with the mint extract together in a big bowl.

With your electric mixer, slowly blend in the sugar powder until you get a firm dough that won't stick to your fingers.

Take the dough and make small balls, put them on paper-lined tray, then squish them into 2-inch circles about 1/4 inch thick.

Stick the tray in your freezer and let the circles harden for roughly an hour.

Heat up the almond chocolate bark in your microwave, 30 seconds at a time, stirring until it's all smooth.

Drop each mint patty into the melted chocolate, wipe off extra chocolate, and set back on the paper. Add sprinkles on top if you want.
