Boil water in a kettle. Take it off the heat and drop in hibiscus tea bags or dried flowers. Let sit for 5-7 minutes. Take out the tea bags or filter out the flowers. Set aside to cool down.

Cut and rinse strawberries. Toss them in a blender with ¼ cup of the cooled tea. Whizz until smooth. If you want it extra smooth, pour through a fine mesh strainer or bag.

Pour the rest of the cooled tea into a big pitcher. Add the strawberry mix, lemon juice and maple syrup. Give it a good stir. Taste and add more syrup if you want it sweeter or more lemon if you like it tangy.

Fill glasses with ice and pour your drink over. Top with strawberry slices, lemon bits and mint if you feel fancy. Drink up and cool down!
