# What You'll Need:

→ For the Grilled Cod

01 - 1 teaspoon fresh thyme, chopped up small
02 - 1 tablespoon lemon juice, squeezed fresh
03 - 1/4 teaspoon ground black pepper
04 - 1/2 teaspoon salt
05 - 1/2 teaspoon onion powder
06 - 1/2 teaspoon garlic powder
07 - 1 teaspoon smoked paprika
08 - 1 tablespoon olive oil
09 - 2 cod fillets (roughly 170 grams each)

→ For the Roasted Tomatoes

10 - 1 tablespoon fresh parsley, cut up
11 - 1 clove garlic, diced up
12 - 1 teaspoon balsamic vinegar
13 - 1/4 teaspoon ground black pepper
14 - 1/2 teaspoon salt
15 - 1 tablespoon olive oil
16 - 2 cups cherry tomatoes

→ For the Creamy Dill Sauce

17 - 1 tablespoon unsalted butter
18 - 1/4 teaspoon black pepper
19 - 1/2 teaspoon salt
20 - 1 teaspoon lemon zest
21 - 1 tablespoon fresh dill, chopped
22 - 1 tablespoon Dijon mustard
23 - 1/4 cup Greek yogurt or sour cream
24 - 1/2 cup heavy cream

# Step-by-Step Guide:

01 - Spoon those hot tomatoes onto plates, lay a piece of grilled cod on top, drizzle over some of the creamy dill sauce, and shake on a little parsley. Eat it right away while it's fresh.
02 - Melt the butter in a small pot over gentle heat. Add the heavy cream, Greek yogurt or sour cream, Dijon, dill, lemon zest, salt, and a bit of pepper. Stir and let it warm up on low for a couple minutes so it gets silky and just a touch thick.
03 - Get your grill or grill pan nice and hot over medium-high. Cook the cod fillets on both sides, about 3 or 4 minutes each, till they're crispy outside and flake apart easily with a fork.
04 - While those tomatoes roast, grab some paper towels and dry off your cod. Rub both sides all over with olive oil, paprika, garlic powder, onion powder, salt, pepper, a splash of lemon juice, and thyme.
05 - Start by heating your oven to 200°C. In a bowl, mix together cherry tomatoes, olive oil, salt, pepper, balsamic, and garlic. Spread it all on a baking pan. Bake for 20 minutes till the tomatoes get soft and a little browned.
