Fill a pot halfway with water and let it come to a boil on medium-high. Toss in noodles and cook until just tender, about 2-3 minutes or follow what's on the package. Drain well and put them in a big bowl made of metal, glass, or ceramic.

Drop the regular soy sauce, dark soy, your vinegar choice, chopped garlic, chicken stock powder, white sugar, green onion bits, chili flakes, and sesame seeds right in the middle of your noodle pile.

Pour your cooking oil in a little pot and warm it up on medium-high. Wait until you see smoke rising, then quickly take it off the heat and pour it straight over the onions, garlic, and chili flakes to gently cook them.

Grab some chopsticks or food tweezers and mix everything really well until all the flavors blend together. Eat it right away and throw on extra green onions and sesame seeds if you want.
