# What You'll Need:

→ Fries

01 - Vegetable oil, enough for deep frying
02 - 450 g frozen French fries (extra crunchy, like fast food style)

→ Seasoning Mixture

03 - 0.25 teaspoon cayenne pepper if you want it spicy
04 - 2 teaspoons chili powder
05 - 1 teaspoon onion powder
06 - 1 teaspoon garlic powder
07 - 2 tablespoons paprika
08 - 2 teaspoons fine salt

→ Cheese Sauce

09 - 1 tablespoon juice from pickled jalapeños
10 - 16 slices American-style processed cheese
11 - 60 ml whole milk

# Step-by-Step Guide:

01 - Pile those seasoned fries onto a platter. Set out that gooey cheese sauce so folks can dunk their fries right in.
02 - Toss the hot fries in a big bowl with your mixed-up spices. Make sure every stick's covered.
03 - Rip up the cheese slices, toss 'em in a microwave-safe bowl, then add milk and jalapeño juice. Pop it into the microwave, heat in 30-second bursts, stirring each time. Once it's all melted and smooth, you're good to go.
04 - Gently drop the frozen fries into your bubbling oil. Let them cook six to eight minutes, until they’re super crunchy and golden. Scoop them out with a slotted spoon onto a plate lined with paper towels so the extra oil soaks up.
05 - Fill up your deep saucepan with just enough oil to cover the fries (should be at least 7.5 cm deep). Warm the oil up to 180°C, use your thermometer to check.
06 - Grab a small bowl. Dump in the salt, paprika, garlic and onion powders, chili powder, plus cayenne if you want some kick. Stir everything until it’s blended well.
