Refried Bean Dip (Printable Version)

Silky bean mix layered with cheese, spicy taco flavors, and bits of pepper. Tastes best with salty tortilla chips.

# What You'll Need:

→ Base

01 - 16 g taco seasoning mix
02 - 120 ml sour cream
03 - 115 g cream cheese, let it soften first
04 - 450 g refried beans, canned or made at home

→ Vegetables and Seasonings

05 - 2 green onions, chop both the greens and whites separately
06 - 35 g jalapenos, take out seeds and chop, use as much heat as you want
07 - 35 g mild green chilies, make sure they're drained and chopped small

→ Cheese

08 - 180 g sharp cheddar cheese, grate it yourself, use half now and half later
09 - 180 g Monterey Jack cheese, freshly grated, use half in the mix and half for topping

→ Garnish

10 - Pico de Gallo if you want
11 - Cilantro leaves to toss on top
12 - Green onion bits for a finishing touch
13 - Jalapeno slices for extra kick (totally optional)

# Step-by-Step Guide:

01 - Pop the dish out of the oven, sprinkle with chopped green onions, cilantro, extra jalapenos and spoon on some Pico de Gallo if you want. Dig in right away with tortilla chips or throw it onto your favorite Mexican-style meal.
02 - Let it bake for 18 to 20 minutes until you notice the cheese melted and bubbly all over.
03 - Take the rest of both cheddar and Monterey Jack cheese and cover the top evenly.
04 - Pour and smooth out the bean mixture in your baking dish, making sure it reaches every edge.
05 - Grab a two-litre or 20x20 cm dish and spritz it with some non-stick spray if you've got it.
06 - Drop in chopped jalapenos, mild green chilies, all the white bits from the green onions and toss in half your grated cheddar and Monterey Jack. Give it a good stir so it's all even.
07 - Drop the refried beans, softened cream cheese, taco seasoning and sour cream into a bowl. Use a whisk, mixer, or stand mixer and whip everything together so it gets creamy and there aren't any chunks.
08 - Fire up your oven and set it to 175°C (350°F).

# Additional Notes:

01 - Freshly grated cheese melts best, so skip the pre-shredded stuff if you can.
02 - More jalapenos means more heat, so use as many as you like.
03 - You can scoop this dip into tacos, use it in enchiladas, or spread it in quesadillas and tostadas for a flavor boost.
