Cheesecake Berry Salad (Printable Version)

Berries and bananas team up with smooth filling for a festive treat everyone loves at cookouts.

# What You'll Need:

→ Cheesecake Base

01 - 1 cup French vanilla liquid creamer
02 - 3.4 ounces dry cheesecake pudding mix (leave unprepared)
03 - 8 ounces softened cream cheese

→ Fruit Mixture

04 - 4 big bananas, peeled and cut into slices
05 - 1/4 cup fresh lemon juice (about 1 big lemon)
06 - 12 ounces blueberries, fresh
07 - 1 pound strawberries, hulled and chopped up

# Step-by-Step Guide:

01 - Grab your hand mixer and beat the cream cheese in a medium bowl until it’s nice and creamy. Wipe the bowl sides down now and then so it all gets mixed.
02 - Next, toss in that dry cheesecake pudding mix and keep mixing 'til it looks totally blended.
03 - Turn your mixer to low. Slowly pour in a splash of French vanilla creamer—do just a spoonful at a time. Let each bit mix in before you add more. Keep going until it's all smooth and silky. Pop it in the fridge while you chop the fruit.
04 - Drop those banana slices in a big bowl. Splash them with lemon juice and toss so they’re all covered, then pour off the extra juice. Add blueberries and strawberries, and mix everything together gently so you don’t smash the fruit.
05 - Take the chilled creamy mixture and softly fold it in with the fruit. You want it all coated but don’t stir too hard.
06 - Dig in right away or put it in the fridge covered 'til you’re ready to eat. If you make it ahead, give it a gentle stir before scooping.

# Additional Notes:

01 - Mix the cheesecake part and fruit bowls on their own ahead of time. Wait to join them until you want to serve so things don’t turn watery.
02 - Too thick? Splash in a little more creamer to thin it out.
03 - If you add the creamer too quick, you might get a lumpy mess. Go slow for the best mix.
04 - No creamer handy? Blend 1 cup heavy cream, 1/4 cup powdered sugar, plus 2 teaspoons vanilla as a swap.
