Give the air fryer basket a good spritz with cooking oil spray. Set aside while you get the zucchini fries ready.

Cut zucchini into stick shapes about 3 inches each. Toss the sticks in seasoned flour. Dunk them quick in your whisked eggs. Right after, roll them around in the Parmesan and breadcrumb mix. Press them in so the coating sticks. Do this for every piece.

On a big plate, stir together flour, salt, pepper, and your Italian seasoning. Crack eggs in a little bowl and beat them until smooth. In another bowl, mix breadcrumbs and Parmesan cheese together.

Line up the coated zucchini in the basket so none are on top of each other. Give the tops a light spritz with cooking oil to help them get crunchy. Cook at 400°F (204°C) for 9 minutes. They're ready when they look golden and feel crispy.
