Air Fryer Zucchini Fries (Printable Version)

Munch on crunchy, golden zucchini fries from your air fryer. They're light, quick, and full of flavor for snacks or sides.

# What You'll Need:

01 - 3 zucchini, medium-sized

→ Seasonings

02 - 1 tablespoon Italian herb blend
03 - 1 teaspoon black pepper (use more or less if you want)
04 - 1 teaspoon salt (add as you like)

05 - 1 cup Italian or panko breadcrumbs
06 - 2 eggs, large
07 - 1/3 cup Parmesan cheese, grated
08 - 1/2 cup regular flour

09 - 2 tablespoons sprayable cooking oil

# Step-by-Step Guide:

01 - Give the air fryer basket a good spritz with cooking oil spray. Set aside while you get the zucchini fries ready.
02 - Cut zucchini into stick shapes about 3 inches each. Toss the sticks in seasoned flour. Dunk them quick in your whisked eggs. Right after, roll them around in the Parmesan and breadcrumb mix. Press them in so the coating sticks. Do this for every piece.
03 - On a big plate, stir together flour, salt, pepper, and your Italian seasoning. Crack eggs in a little bowl and beat them until smooth. In another bowl, mix breadcrumbs and Parmesan cheese together.
04 - Line up the coated zucchini in the basket so none are on top of each other. Give the tops a light spritz with cooking oil to help them get crunchy. Cook at 400°F (204°C) for 9 minutes. They're ready when they look golden and feel crispy.
05 - Take the hot fries out carefully and eat them right away. They're perfect for snacking or as a yummy side, and all that Italian seasoning and cheesy taste really stands out.

# Additional Notes:

01 - Try swapping in almond flour and ground pork rinds for a gluten-free, low-carb twist. Double-check your pork rinds though, since lots have salt already.
02 - You can switch out the zucchini for eggplant or green beans. Just cut them about the same size and check cooking times—they may need more or less.
