Turkey with Peppers Mix (Printable Version)

Speedy, tasty ground turkey with colorful bell peppers ready in under half an hour.

# What You'll Need:

01 - 1 lb ground turkey
02 - 1 tbsp olive oil
03 - 1 small onion, chopped
04 - 3 bell peppers (green, red, or yellow), cut into strips
05 - 3 cloves garlic, crushed
06 - 1 tsp smoked paprika
07 - 1 tsp ground cumin
08 - ½ tsp chili powder (skip if you don't like heat)
09 - ½ tsp salt (adjust to your liking)
10 - ½ tsp black pepper
11 - ¼ cup low-sodium chicken broth
12 - 1 tbsp tomato paste
13 - 1 tbsp soy sauce or coconut aminos
14 - Juice of ½ lime (adds a nice zing)
15 - Handful of fresh cilantro or parsley to top

# Step-by-Step Guide:

01 - Warm up the olive oil in a big skillet over medium heat. Toss in your chopped onions and let them cook until they're soft and clear, around 3 minutes. Add the crushed garlic and let it cook for just 30 seconds until you can smell it.
02 - Throw the ground turkey into your pan. Break it into tiny bits with your spoon. Keep cooking until you don't see any pink parts, about 5-6 minutes.
03 - Toss in the smoked paprika, cumin, chili powder, salt and black pepper. Mix everything so the turkey gets coated with all the spices. Add your bell pepper strips and stir it all together. Let the peppers cook for 3-4 minutes so they soften a bit but stay crunchy.
04 - Add the chicken broth, tomato paste, and soy sauce to the pan. Mix everything well and let it bubble gently for 2-3 minutes so all the flavors can blend together.
05 - Turn off the stove and squeeze fresh lime juice over everything for extra flavor. Sprinkle chopped cilantro or parsley on top. Enjoy right away by itself or with something on the side.

# Additional Notes:

01 - This meal tastes best when it's just made, but works great for weekly meal planning too.
02 - You can make it milder or spicier depending on what you like.
03 - Want more liquid? Just add a splash more tomato sauce or chicken broth.
04 - Got leftovers? Turn them into tacos, mix with rice in a bowl, or stuff into a baked potato for something different.
