Dig into juicy chunks of steak tossed in a buttery garlic sauce. Whips up in no time and always brings a crowd to the table—even as an easy main.

# What You'll Need:

→ Steak Bites

01 - 680 grams sirloin steak, cut into 2.5 cm cubes (or ribeye, strip steak, or other well-marbled beef)
02 - Salt, freshly ground, to taste
03 - Black pepper, freshly cracked, to taste

→ For Searing and Sauce

04 - 15 ml extra virgin olive oil
05 - 56 grams unsalted butter, divided
06 - 4 garlic cloves, finely minced
07 - 15 ml fresh parsley, finely chopped

# Step-by-Step Guide:

01 - Allow steak cubes to come to room temperature for 30 minutes to ensure even cooking.
02 - Slice steak into uniform 2.5 cm cubes. Season thoroughly on all sides with salt and black pepper.
03 - Heat a large skillet over medium-high until hot. Add olive oil and 14 grams butter. Arrange half of the beef cubes in a single layer; do not overcrowd. Sear undisturbed for 2 minutes for a deep caramelized crust, flip, and cook 2 minutes more for medium doneness. Transfer seared pieces to a plate and repeat with remaining cubes.
04 - Lower skillet heat to medium-low. Add remaining 42 grams butter and minced garlic, stirring constantly for 1–2 minutes until fragrant and pale gold without browning.
05 - Return steak and accumulated juices to the skillet. Toss gently to coat all pieces evenly in garlic butter. Scatter finely chopped parsley over the steak bites and serve at once.

# Additional Notes:

01 - Maintain a hot, dry surface on steak cubes to achieve the most robust crust and seal in juices.
02 - Using cast iron imparts a deeper sear and optimal caramelization.
03 - This preparation suits 4 servings as a main or 6 as a hearty appetiser, varying with accoutrements.
