English Muffin Pizza (Printable Version)

Pile fluffy eggs, sausage gravy, cheddar, and sausage on crisp muffins for a comfy breakfast you won't forget.

# What You'll Need:

→ Base and Toppings

01 - Dash of milk for eggs
02 - 60 grams mild cheddar cheese, shredded
03 - 50 grams breakfast sausage, cooked and crumbled
04 - 4 large eggs
05 - 4 English muffins, split in half

→ Sausage Gravy

06 - 1.25 millilitres salt
07 - 16 grams all-purpose flour
08 - 60 millilitres sausage drippings
09 - 1.25 millilitres black pepper
10 - 240 millilitres milk

# Step-by-Step Guide:

01 - Toss sausage drippings and flour into a pot and stir it up on medium heat until you get a smooth, paste-like mix.
02 - Pour in the milk a bit at a time, whisk so it stays lump-free, shake in salt and pepper, and let it cook till it turns thick. Set it off to the side.
03 - Crack the eggs into a bowl, splash in a bit of milk, whisk it all up, toss it in a hot skillet, and cook gently until the eggs just set. Take 'em off the heat.
04 - Get your oven going at 180°C so it’s nice and hot.
05 - Line your baking tray with the muffin halves, slather some gravy on each, pile on the fluffy eggs, then the sausage bits, and cover it all with cheddar.
06 - Slide the tray into the oven for 10 minutes or so, until you see the cheese bubbling away and totally melted.
07 - Take them out, let them cool for a couple of minutes, then dig in!
