Toss sausage drippings and flour into a pot and stir it up on medium heat until you get a smooth, paste-like mix.

Pour in the milk a bit at a time, whisk so it stays lump-free, shake in salt and pepper, and let it cook till it turns thick. Set it off to the side.

Crack the eggs into a bowl, splash in a bit of milk, whisk it all up, toss it in a hot skillet, and cook gently until the eggs just set. Take 'em off the heat.

Get your oven going at 180°C so it’s nice and hot.

Line your baking tray with the muffin halves, slather some gravy on each, pile on the fluffy eggs, then the sausage bits, and cover it all with cheddar.

Slide the tray into the oven for 10 minutes or so, until you see the cheese bubbling away and totally melted.

Take them out, let them cool for a couple of minutes, then dig in!
