Chicken Doritos Bake (Printable Version)

Melted cheese with chicken, corn, smooth cream cheese, and crunchy Doritos makes this the chill comfort meal you want.

# What You'll Need:

01 - 3 cups (about 90 g) Doritos, smashed up

→ Pantry

02 - 300 g condensed cream of chicken soup
03 - 1/2 teaspoon black pepper
04 - 1/2 teaspoon salt
05 - 1 teaspoon garlic powder

→ Vegetables

06 - 250 g canned corn, drained
07 - 1 bunch green onions, chopped, keep some aside

→ Dairy and Cheese

08 - 1 cup (100 g) shredded Mexican cheese blend, for topping
09 - 2 cups (200 g) shredded Mexican cheese blend, stir-in
10 - 225 g chive whipped cream cheese

→ Protein

11 - 3 cups (about 450 g) rotisserie chicken, pulled

# Step-by-Step Guide:

01 - Let it sit for a few minutes to cool off, then scoop up and enjoy warm.
02 - Place casserole into the oven you already heated up and bake for 17–20 minutes or until the cheesy top is bubbly and lightly browned.
03 - Sprinkle on the Doritos crumbles, then add your leftover 1 cup cheese and that set-aside green onion.
04 - Spoon your filling into a buttered 33 x 23 cm dish, leveling out the top.
05 - Keep aside a quarter cup green onions. To your mixed bowl, toss in the rest of the green onions, chicken, corn, 2 cups cheese, salt, pepper, and garlic powder. Mix everything so it’s nicely combined.
06 - Whip up the chive cream cheese and chicken soup together in a big bowl, using a hand mixer, till smooth and creamy.
07 - Fire up your oven to 200°C so it’s ready to go.
