Set oven to 200°C on broil setting and allow to fully preheat.

Add potatoes to a large pot of salted water. Bring to a boil, cover, and cook for 30–35 minutes until fork-tender. Drain thoroughly.

Grease a large baking sheet with olive oil spray. Place potatoes on sheet and gently flatten each with a potato masher into thick disks.

In a small bowl, combine melted butter, crushed garlic, and chopped parsley.

Drizzle garlic butter mixture over each potato. Season evenly with salt and black pepper.

Mist potatoes lightly with olive oil spray and broil for 10–15 minutes until surfaces are golden and crisp.

Remove tray from oven, sprinkle potatoes with grated Parmesan, and broil again for 2–3 minutes until cheese is melted and lightly golden.

Transfer potatoes to a serving platter. Garnish with remaining parsley and a pinch of salt if desired. Serve immediately while hot.
