Slice your steak really thin. In a bowl, drop in white pepper, sugar, sesame oil, ginger garlic paste, and soy sauce with the beef strips. Stir until everything's coated. Cover it up and let it hang out for 15 minutes.

Grab another bowl. Dump in salt, sugar, vinegar, soy sauce, ketchup, and the sweet chilli sauce. Give it a good whisk and pop it aside for now.

Crack the egg into the bowl with marinated beef. Mix it up well. Toss each strip through your potato or corn starch so every piece gets a good dusting. Break up any chunks, get rid of extra flour.

Heat up your oil in a deep pan or wok, aiming for 175°C. Cook the beef strips in a few rounds, about a minute or two each time, until they're crunchy and golden. Let them rest on kitchen paper or a wire rack.

Add just a spoonful of oil to a clean wok, get it hot on medium-high. Slinger in the onion, cook for a moment, then toss in bell pepper and stir it all quickly.

Throw your fried beef into the wok with the veggies. Pour in the sauce you set aside, drop in those spring onions and hot chillies. Stir and flip everything on high till it all gets glossy and mixed up, about a minute or two.

Pile it on plates while it's still steamy. Eat it right away, maybe next to naan or some hot rice if you want.
