Scoop the mixture into a big bowl or four cups. Let it hang out in the fridge at least two hours so it firms up.

Bit by bit, fold that soft-set gelatin into your whipped cream. Blend until it looks smooth and fluffy.

Toss cream and sweetener in a large bowl. With an electric mixer, beat them until peaks keep their shape.

Pour in the ice water to your dissolved gelatin, mixing until most of the ice is melted and it starts to cool off. Pick out any leftover ice cubes. Let it start thickening while you work on the next bit.

Add ice to a measuring cup, then top off with cold water to hit 240 ml. If you’re using GramZero gelatin, just use 240 ml cold water—skip the ice.

Toss the gelatin powder into a medium bowl with the boiling water and stir until everything’s totally dissolved.
