Spicy Shrimp Fettuccine (Printable Version)

01 - 1 lb jumbo shrimp, shells off and cleaned
02 - Salt to your liking
03 - Freshly ground pepper as needed
04 - 1 teaspoon Creole or Cajun spice mix
05 - 1/2 teaspoon oregano flakes
06 - 2 tablespoons virgin olive oil
07 - 6 oz sliced andouille or smoky sausage, cut thin
08 - 10 oz flat fettuccine noodles
09 - 1/2 onion (yellow), sliced thin
10 - 1 sliced red pepper
11 - 4 teaspoons Creole spice blend
12 - 1 teaspoon sugar (brown)
13 - 2-3 minced garlic cloves
14 - 1/2 cup tomatoes, crushed
15 - 1 cup no-sodium chicken stock
16 - 1 cup thick whipping cream
17 - 2/3 cup Parmesan, grated finely
18 - 1 tablespoon chopped fresh parsley leaves

# Step-by-Step Guide:

01 - Mix your shrimp with some salt, pepper, the Creole spice, and dried oregano until coated completely. Warm up a big pan over medium-high flame and pour in 1 tablespoon oil. Fry shrimp about 2 minutes each side, then take them out and put aside. Add another tablespoon oil to your pan and cook those sausage slices till brown for around 4-5 minutes. Take them out too.
02 - Get some water really bubbling in a pot with salt and throw in your fettuccine till it's just right. Drain the water off and set it aside.
03 - Turn the heat down to medium and add a little more oil to the pan. Cook your onion and red pepper with the Creole mix, brown sugar and a tiny bit of salt until they're soft. Toss in your garlic and let it cook about half a minute till you can smell it. Pour in your tomatoes, stock, and cream, stirring and scraping the pan bottom. Let it bubble gently for a bit.
04 - Mix the Parmesan in till it melts away. Add your cooked pasta and sausage, and stir so everything gets coated. Let it warm up for 2-3 minutes. Lastly, drop your shrimp back in and give it a gentle stir.
05 - Serve it up hot with some fresh parsley sprinkled on top.

01 - Go for half-and-half if you want something lighter. If you like it spicy, throw in some red pepper flakes or extra Creole seasoning. You can swap in gluten-free noodles if that's what you need.
