In the same skillet using the reserved sausage drippings, sauté the chopped garlic for about 1 minute until fragrant.

Pour in chicken broth, canned diced tomatoes with chilies, heavy cream, and Cajun seasoning, stirring to combine.

Add uncooked bowtie pasta to the skillet. Cover with a lid and simmer over low heat for about 14 minutes, or until the pasta is cooked al dente, stirring occasionally.

Return the cooked sausage to the pan. Add shredded cheddar cheese and stir until melted and well combined. Serve immediately.
